The training program is aimed at individuals who want to learn the art of sushi-making and pursue a career in this field.
During the two-year training, you will acquire the necessary basic knowledge and gain the experience needed to gradually approach the perfection of a Japanese sushi master.
Afterwards, you can work as a sushi chef or further your training in the wonderful and fascinating world of Japanese cuisine.
structure of the Training Program
- Practical training in several phases
- Theoretical modules on various relevant topics, such as food science, sushi preparation, fish processing, etc.
- Practical and theoretical exams
Your tasks
- Preparing the mise en place for sushi production
- Preparing various types of sushi and sushi platters
- Ordering fish and vegetables according to internal guidelines
- Checking incoming goods
- Adhering to the HACCP hygiene concept
Your talents & experience
- Up to 35 years old (m/f)
- At least 2 years of kitchen experience
- Knowledge of German
- Valid work permit for Switzerland
- Flexible (split shifts and weekend work)
- Friendly, customer-oriented, team player, well-groomed appearance
- Interest in Japanese cuisine and culture
- Basic skills in using IT tools
